What the heck is red velvet cake?

If you are not from the south you might be intrigued with red velvet cake. To be honest, I really did not know what it was until I got into baking and decorating cakes and I am always surprised when brides come for consulations are not familiar with it. Red velvet cake is really a one of a kind cake. Based on the ingredients there is no other cake like it. Basically all red velvet cakes contain the following ingredients and some you might find surprising: flour, sugar, salt, eggs, butter or oil in addition to cocoa powder, buttermilk, tons of red food coloring, baking soda and vinegar. In the last step you have to mix the vinegar with the baking soda and add it to the batter. Everytime I do this I feel like a kid building a volcano and mixing baking soda and vinegar to make the “lava.”
